For some reason, every fast day fills me with an overwhelming urge to bake. This is what I did today:
Scone batter. mmmmmmmmm.
Baked yummy blueberry-pecan scones!
Next up: Peanut Butter Banana Bread with Honey and Pecans.
Then: Sweet Potato and Black Bean Casserole
Finally: Crunchy French Bread
The final product – made into tasty garlic bread.
Now we just have to wait until 9:46 to eat all this yumminess!! We’re starting with melon and soup, though, to ease ourselves back into food.

Please tell me more about the Sweet Potato and Black Bean Casserole. It looks good and healthy.
It was yummy, and had a great kick. I got the recipe from http://allrecipes.com/CustomRecipe/62340325/Sweet-Potato-and-Black-Bean-Burritos/Detail.aspx
I baked the sweet potatoes, covered, for about 45 minutes on 350, and then mashed them in the casserole dish with a little drizzled olive oil. I made the bean part as indicated and poured over the sweet potatoes and mixed. I used canned corn and I didn’t use green peppers (I didn’t have any on hand).
It all looks delicious!!! Now I’m craving scones!!
